I adore shrimp! I adore eggs! I begged and pleaded, don’t take them away from me. All these years the nutritive experts have been informing us they’re high in cholesterol and if you eat these 2 foods you’ll have a heart attack! Now, well conducted studies indicate that low-fat shrimp and eggs, substituted for fatty foods, don’t raise blood cholesterol and are not a major contributor to coronary disease. A study published in the American Journal of Clinical Nutrition says despite all that cholesterol, shrimp is completely good for you.

This is not a health concern, because shrimp is low-fat with a rich content of highly unsaturated fatty acids, which lead to the formation of high-density lipids, frequently known as “good cholesterol”. Consuming shrimp may lower blood cholesterol levels.

So, here is a great shrimp dish I make quite regularly. The first recipe came out of an old Weight Watcher Cookery book , but as usual ( something I learned from my Gramps ) I usually throw in a few extras to make it taste better and substitute some ingredients, but it’s still healthy cooking. I lost forty lbs. On these recipes even with additions. Here is a tip I would like to pass on about fish. I soak it in milk before cooking; it seems to take away any bad fishy taste.

Shrimp in Spicy Mustard Sauce

12 oz. Shrimp, peeled, deveined
2/3 cup fat free &, or substitute evaporated skim, regular skim or low-fat milk or soy milk
2 spoons Dijon Mustard
spoon curry powder
¼ teaspoon cumin
¼ teaspoon black black pepper
1 spoon black pepper
1 spoon lemon juice
small spoon chicken bullion powder or 1 cube
1 spoon olive oil
½ onion, minced
4 garlic cloves, minced
Parsley
Parmesan Cheese (optional)

1. Shell & devein shrimp and set aside.

2. In 1-cup liquid measure mix milk, mustard and seasonings, put aside ( if you are using milk instead of the fat free ½ & ½ , mix some of the milk with a large spoon of cornstarch and add to sauce at end to thicken. )

3. In a skillet, heat oil over medium-high heat; add shrimp, onion and garlic, stir constantly until shrimp just turns pink, two to 3 minutes.

4. Pour milk mixture into skillet and cook, stirring consistently, till mix comes to boiling point. Reduce heat to low, (add cornstarch mixture if using ) let cook till a little thickened, one or 2 minutes.

5. Using a slotted spoon, remove shrimp to serving platter ; set aside.

6. Increase heat to medium-high; continue cooking sauce till mix is reduced by half, about five mins. Pour sauce over shrimp and spatter with parsley and parmesan.

Makes 2 servings

Quinoa, Spanish quinua, from Quechua kinwa, a species of goosefoot (Chenopodium), is a grain-like crop grown primarily for its edible seeds. It is a pseudocereal rather than a true cereal, or grain, as it is not a grass. Quinoa is 15-16% protein and is high in E and B vitamins, calcium, iron and phosphorous. It is easy to digest and has a delicious flavour. It must be thoroughly rinsed before cooking and is then prepared like rice. Simmer it for 15 minutes in an equal volume of water. Quinoa originated in the Andean region of South America, where it has been an important food for 6,000 years. Its name is the Spanish spelling of the Quechua name. Quinoa is generally undemanding and altitude-hardy, so it can be easily cultivated in the Andes up to about 4,000 meters. Even so, it grows best in well-drained soils and requires a relatively long growing season. In eastern North America, it is susceptible to a leaf miner that may reduce crop success. As a chenopod, quinoa is closely related to species such as beets, spinach and tumbleweeds. Its leaves are also eaten as a leaf vegetable, much like amaranth, but the commercial availability of quinoa greens is currently limited. Quinoa was of great nutritional importance in pre-Columbian Andean civilizations, being secondary only to the potato, and was followed in importance by maize. In contemporary times, this crop has become highly appreciated for its nutritional value, as its protein content is very high (12%–18%), making it a healthy choice for vegetarians and vegans. Unlike wheat or rice (which are low in lysine), quinoa contains a balanced set of essential amino acids for humans, making it an unusually complete protein source. It is a good source of dietary fiber and phosphorus and is high in magnesium and iron. Quinoa is gluten-free and considered easy to digest. Quinoa has a light, fluffy texture when cooked, and its mild, slightly nutty flavor makes it an alternative to white rice or couscous. The first step in preparing quinoa is to remove the saponins, a process that requires soaking the grain in water for a few hours, then changing the water and resoaking, or rinsing it in ample running water either in a fine strainer or in cheesecloth. Removal of the saponin helps with digestion; the soapy nature of the compound makes it act as a laxative. Most boxed quinoa has been pre-rinsed for convenience. A common cooking method is to treat quinoa much like rice, bringing two cups of water to a boil with one cup of grain, covering at a low simmer and cooking for 14–18 minutes or until the germ separates from the seed. The cooked germ looks like a tiny curl and should have a slight bite to it (like al dente pasta). As an alternative, one can use a rice cooker to prepare quinoa, treating it just like white rice. Vegetables and seasonings can also be added to make a wide range of dishes. Chicken or vegetable stock can be substituted for water during cooking, adding flavor.

  2. Boil the quinoa according to instruction on the package.  Usually you need 2 cups of water for 1 cup of quinoa . Boil until the water has been absorbed (10-15 min).
  3. Alternative  to bring out the nutty flavor: Take the boiled quinoa and fry it gently with sliced garlic in wok or frying pan.

Other spices that work really great with quinoa are cumin and coriander and fresh herbs.

Quinoa is prefect to add to soups,  stews and chili.

When you make a quinoa salad cook the quinoa according to step 1 and 2 above. Let it cool. Then simply add your favorite salad ingredients. Truffle oil and basil makes your quinoa salad absolutely delicious.

Ingredients (serves 4)

2 cups water
1 cup quinoa
1/5 cup raisins
1/5 cup dried apricots
2 teaspoons of chopped almonds

Bring the water to boil. Add quinoa and boil at low temperature for 5 min.
Stri in the other ingredients and heat gently until all the water is gone.
